What are Cold Season Crops you ask?  Simply put, they are vegatables that prefer to grow in the cooler temperatures of Spring and Fall.  The edible leaves and roots of lettuce, carrots and onions are some cold weather crops you see in salads everyday. The edible seeds of peas and some beans are another cold crop that many backyard gardeners can't get to the dinner table because they eat more than they pick while in the garden. Other cool weather crops that are more often cooked than eaten raw are artichokes, broccoli and cauliflower.
